The story of “Les Terres de Chamarel” begins long before the first course reaches the table. It begins in the highlands of Chamarel, where volcanic soil, the climate and generations of local expertise have shaped produce deeply connected to the identity of the region.

Coffee, vanilla, cocoa, pink peppercorn, honey and rum each express a different facet of Chamarel. More than ingredients, they became the inspiration for a signature lunch created to honour the land and place its produce at the centre of every course.

An Idea Rooted in the Terroir

"When Le Chamarel Restaurant entrusted me with the mission of creating a menu inspired by the lands of Chamarel, the challenge was clear: to work exclusively with local produce and reveal its richness," explains Alessio.

This vision guided every stage of the creative process. The objective was never simply to bring together the region's most emblematic ingredients, but to understand their identity, their natural harmony and the most authentic way to showcase them. Every ingredient was carefully considered, ensuring it remained true to its origins while contributing to a menu with its own distinctive story.

Chamarel coffee held a special place in this creative process. It became one of the first anchors of the menu, before the idea naturally expanded to other treasures of the region, from vanilla and cocoa to honey, pink peppercorn and rum. Gradually, “Les Terres de Chamarel” took shape around one shared intention: to let these products become the true signatures of the menu.

To bring this vision to life, extensive research was devoted to the produce of the region. Chef Wesley brought his culinary expertise, while Alessio drew on his knowledge of food pairing to shape refined combinations and balanced flavours.

Together, they conceived the menu as a complete composition, with each course flowing naturally into the next. From the opening plate to the final dessert, every creation reveals a different expression of Chamarel while preserving a sense of harmony throughout the experience.

Bringing Chamarel's Terroir to the Table

Four Courses That Tell the Story of Chamarel

The experience begins with pan-seared duck foie gras marbled with Chamarel coffee, served with orange and cumin-glazed baby carrots and citrus gel. From the very first bite, the roasted depth of the coffee sets the tone for the journey ahead.

Next comes red snapper, accompanied by a vanilla-infused shellfish bisque, sesame-scented rice and bok choy, and mango relish. Used in a savoury expression, the vanilla brings balance and finesse to the seafood.

The journey continues with roasted venison fillet, served with beetroot purée, sweet-and-sour chouchou and a venison jus enriched with dark chocolate. The depth of the cocoa complements the character of the dish, while the garnishes bring balance and contrast.

Finally, green papaya poached in a honey and Chamarel rum nage, with pink peppercorn infused into its cooking syrup, is served with citrus sorbet and toasted hazelnuts, bringing the lunch to a fresh conclusion true to the ingredients behind this creation.
