Our approach continues through mindful operations, where energy use is monitored to spot inefficiencies and make informed improvements. From simple daily actions to annual carbon footprint assessments, each step helps guide our transition towards more responsible practices.

Circular economy

This effort is reflected in how resources are managed across the restaurant, with a focus on reducing waste and making more responsible choices in daily operations. Waste is sorted and redirected through recycling partners, helping limit landfill impact and encourage more sustainable practices. In the kitchen and across operations, simple actions are taken to minimise waste and rethink the use of resources, while alternative solutions are opted to reduce reliance on chemical cleaning products. Together, these initiatives support a more mindful and responsible way of working.

In the kitchen, this mindset encourages creative solutions and highlights local products. From traditional recipes to new experiences such as coffee tastings and local selections, each offering reflects the richness of the island and supports a more thoughtful approach, including the “Kas Poz Gourmande” from the menu, with a local touch.

Through our Gourmet Corner, Mauritian products and handmade creations take the spotlight, highlighting the talent and creativity of local artisans. We work closely with artisans, entrepreneurs, building local collaborations, and long-term partnerships.

At Le Chamarel Restaurant, supporting the local community is very important. We prioritise local employment by recruiting team members from the region, creating opportunities and strengthening our connection with the village of Chamarel. We collaborate with local NGOs and support initiatives that empower the Chamarel community.
